Tostada for lunch....


Another good one. I was in the mood for some "Mexican food" for lunch, and this was close enough. A couple days ago, I had cooked some pinto beans in my crock pot nearly all day. I let them cool and put them in the fridge. This morning, I put some in a pan along with a little water and onions and let them heat..then mashed them with a potato masher to make refried beans. I also had some ground turkey breast cooking in another pan. I found some organic tostada shells that have nothing more than corn, lime, canola oil, and one other thing..I cant remember what it was. But I knew it was something I could have. So when everything was done cooking, I layered the tostada with some beans, ground turkey, the shredded up fresh spinach (you could use whatever lettuce you want..but spinach is good for you. I use it for all my lettuces). I don't have any tomatoes but if I did, I would have added tomatoes as well. I topped it with some salsa verde and chipotle salsa both from trader joes. Neither of them have any foods that I cannot have. It turned of so good...full of flavor and without all the added garbage you would normally be eating when making a tostada. I only had one and I am pretty full.
