Delicious.....bacon and egg muffins...


Have seen variations of these lately online, and thought I would give it a go. Super protein packed breakfast goodness. Check it out....
 
 diced onions
diced green peppers 
 cook 12 pieces of bacon (I use nitrite free turkey bacon)
 Line each muffin space with a slice of bacon
 mix together a dozen eggs and couple tablespoons milk if desired (I used almond milk)
 put some onions and green peppers in the bottom of each muffin space
 pour eggs into each muffin space
 preheat overn to 375 degrees
 place in oven and bake for around 30 min
 remove from oven and srpinkle with cheese if desired
(I forgot to shred cheese so I just put a small piece of cheese for kids)
(just an fyi...most shredded cheese has a lot of added ingredients..regular block cheese is normally better)
finished product...delicious!!
You can see that the bacon is well down into the egs.
Variations on this could be unlimited.
Fun for kids!!
