Super easy and yummy dinner...a favorite in our house...

I know it has been forever since I have posted pics of the family. Those will come soon. But I told a friend I would post how I make this super easy chicken and potato meal (gluten free and dairy free). Seriously, one of the easiest (and yummiest) ever....
 
1) Layer the bottom of a baking dish with frozen boneless skinless chicken breasts (we use an 11x13 glass dish but adjust the size according to your family size...we are almost needing two dishes now). Don't do anything with the chicken other than take it out and place it in the bottom of the baking dish. No need to thaw
 
 2) cube as many potatoes as needed to cover the chicken. Just cut up the potatoes and toss them right on top of the frozen chicken. I cover the chicken completely with potatoes...you cant even see the chicken
3) drizzle (or pour liberally..lol) potatoes with your favorite sauce and/or seasoning. BBQ sauce works well and tastes (and smells) delicious. But our favorite is this honey dijon sauce (I use at least 1/2 bottle usually more) and a garlic and herb seasoning over the top of that. This is what I did in the picture. I often get requests for this specific dish.

 
4) Bake at 375 degrees for approx 1 hour. This dish takes an hour and sometimes 20 min more in the large dish that we use. Just check to be sure chicken is cooked through and potatoes are soft and golden.

*My oven decided to stop working while this was baking, so we had to take it up to my grandmas to finish it...thus I forgot to take an after photo. But it is delicious. And your house will smell delightful while baking it. And the variations on seasonings and flavors are endless.
