taco soup.....yummy.......


I am sure this is a recipe that most of you have already tried....but we love it. Especially this time of year with all the stormy weather....comforting for sure.

Two cans of beans ( I used 1 white and 1 kidney)
Two large cans tomatoes (I used 1 diced and 1 crushed)
two cans of corn (again...I used 1 white and one golden)
one pound cooked ground beef
1 large onion
pack of frozen pepper strips
two packs of taco seasoning
( I think that is all the ingredients)
I simmer this in a crockpot all day...but you can cook it on the stove as well. Just combine all ingredients after you cook the ground beef....and there you go. It is sooooooo yummy....and pretty healthy. If you decide to simmer it in the crockpot......it makes your entire house smell so wonderful.

I make this minus the onions and peppers but will have to try it that way. It's really yummy topped with sour cream and shredded cheddar or mont. jack cheese. Don't drain the beans, corn, or tomatoes and that makes enough liquid for a soup base. We like this with sweet corn muffins. Thanks for the post. I think it will be extra yummy with the peppers and onion.

It's simmering on the stove right now, smells good! I'm really hoping that my husband at least likes it, he's warming up to beans very slowly. We'll be having it with hush puppies- my husband AND kids love those. I'll let you know how it turns out!

I keep forgetting to comment on the soup. I LOVED it!! I have to portion some out into a small pot without beans for David, but Scott, Rachel, Emma and I love it. Aidan and Alan have too much of their dad in them. Picky eaters. Thank you for the recipe!
